{Easy Veggie Omelet}
1 tsp coconut oil
2 eggs beaten*
salt
pepper
1/4 cup cheddar cheese (shredded)
diced tomatoes
chopped green onion
melt 1tsp coconut oil in 8? saute pan over medium heat. while coconut oil is melting beat eggs in small bowl and season. when coconut oil is melted completely, add eggs. when eggs become solid on bottom, using small flat spatula flip over. add shredded cheddar cheese, diced tomatoes & chopped green onions on one half. fold other half over veggies and cheese. when cheese is slightly melted, remove pan from heat and slid omelet onto plate.
*for a healthier omelet use only the egg whites to prepare this dish

Wonderful! I do one similar but I cook the ingredients in the pan first, then pour in the egg. I’ll be showing my variation on our Junk Loser linkups.
